Ingredients: Serves 6
- 200 grams Fairway Assured conchiglie pasta
 - 4tbs olive oil
 - 1 red pepper
 - 1 yellow pepper
 - 1 spring salad onion
 - ½ bunch mint chopped
 - ½ bunch coriander
 - 2 tsp capers
 - Pinch of Fairway Assured chilli flakes
 - Fairway Assured salt and pepper
 - Juice of 1 lemon
 
Method
- Bring a pan of salted water to the boil and pour in the pasta and cook for 10/12mins or check timing on packet. When cooked drain and run under cold water to chill quickly.
 - Slice the peppers and spring onion to 1cm dice.
 - When pasta is drained well add to all the other ingredients and stir well, then season with salt and pepper and serve.
 - Can be served with lamb chops, grilled fish or roasted vegetables.
